Candied Cashews

  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 egg whites
  • 1 tablespoon vanilla
  • 1 pound cashews

Preheat your oven to 250 degrees F. In a medium-sized bowl, mix together the sugar, cinnamon, and salt. Set them aside. In a mixer, beat together the egg whites and vanilla until they are frothy. Stir in the cashews and mix until the nuts are evenly coated. Dump the nuts into the sugar mixture and mix everything well.

Spoon the cashews onto a greased cookie sheet. Bake them for one hour, stirring every 15 minutes. Let them cool completely before serving.
